Almost five years ago I had a diverticulitis attack that put me in the hospital for four days of intensive antibiotics. I was give a list of more things that I couldn’t eat: nuts, seeds, and popcorn.
Popcorn was one of my favorite foods. It reminded me of Sunday evenings, eating popcorn and play checkers with my siblings. We would keep popping corn until every was satiated and happy. It was also the time that I could still drink milk. There is nothing better than buttered popcorn and milk.
So about forty years later, I can’t eat popcorn. Every time I try and eat that treat, I end up with a stomach ache and a fever. So I’ve learned my lesson. I still crave it though.
Recently for no apparent reason, I bought some puffed rice from Arrowhead Mills and looked for some recipes that weren’t “cereal.”
I found some interesting Indian recipes. They make deserts out of puffed rice.
I took the idea and ran with it.
