Once again this recipe came about because I tried some Atkins protein cookies and then spent a half a day on the toilet, trying to expell the product from my body. When I looked closer at the ingredients, I saw there was corn and soy in there. I have a reaction to both of those products.
Corn makes my gut inflame and making it sore, while soy is like giving myself a really good laxative.
I went looking for a soft cookie recipe and couldn’t find one that worked for me. Plus when I added protein powder into the cookies, they just hardened into bricks.
Finally I watched a youtube video from one of Martha Stewart’s bakers and he talked about what proportions between butter and flour were needed to make the different cookies— soft or hard.
I used that idea to come up with my own protein chocolate chip cookies.
